The Honey Trap is a captivating cocktail that balances sweet and smoky flavors for a truly unique drinking experience.  It's perfect for those who enjoy a complex and intriguing beverage.

Ingredients:

  • 1 ½ tablespoons (¾ ounces) Honey Syrup (recipe below)
  • 1 ½ tablespoons (¾ ounces) Lemon Juice
  • ½ tablespoon (¼ ounces) Ginger Juice
  • 3 tablespoons (1 ½ ounces) Reposado Tequila
  • ½ tablespoon (¼ ounces) Mezcal
  • 1 tablespoon (½ ounces) Kosher Salt
  • 1 tablespoon (½ ounces) Bee Pollen (optional)
  • Lime wedge (for garnish)

For the Honey Syrup:

  • 1 cup water
  • 1 cup honey

Instructions:

  1. Make the Honey Syrup (optional, but recommended): Combine equal parts water and honey in a saucepan over medium heat. Stir until the honey dissolves completely. Bring to a simmer, then remove from heat and let cool completely.

  2. Prepare the Bee Pollen Salt (optional): In a small bowl, combine the kosher salt and bee pollen. If using, grind the bee pollen slightly with a mortar and pestle for easier mixing. You can also add a pinch of turmeric for a touch of color, but this is entirely optional.

  3. Rim the glass: Apply a lime wedge around the rim of a rocks glass. Dip the rim in the bee pollen salt (or just salt if not using bee pollen).

  4. Combine the liquid ingredients: In a shaker filled with ice, add the honey syrup, lemon juice, ginger juice, tequila, and mezcal. Shake well for about 15 seconds.

  5. Strain and serve: Strain the cocktail into the prepared rocks glass filled with fresh ice. Garnish with a lime wedge.

Tips:

  • If you don't have bee pollen, you can simply use the salt rim.
  • Adjust the sweetness to your preference by adding more or less honey syrup.
  • For a spicier drink, add a dash of habanero or jalapeño simple syrup.
  • This recipe makes one cocktail. Multiply the ingredients accordingly to serve multiple people.
