Ascend to Flavor Nirvana with the White Dragon Cocktail

The White Dragon cocktail is a sophisticated and refreshing beverage that combines citrusy and floral notes with a touch of creamy indulgence.  Perfect for a summer evening or an elegant gathering, this cocktail is sure to impress.

Ingredients:

  • 1 ¾ ounces Blanco Tequila (Casa Dragones Blanco is a great choice)
  • ¾ ounce Cointreau (or another orange liqueur)
  • ¾ ounce Freshly Squeezed Lemon Juice
  • 1 Egg White (pasteurized recommended)
  • Orange Twist (for garnish)

Instructions:

  1. Separate the egg white: Gently crack the egg, separating the yolk from the white. Be very careful not to break the yolk or get any yolk in the white, as this can affect the texture of the drink. You can use a special egg separator tool or simply separate it over a small bowl, transferring the white to your cocktail shaker.

  2. Dry Shake (optional): For a frothier drink, add the tequila, Cointreau, lemon juice, and egg white to a shaker without ice. Shake vigorously for about 15 seconds. This helps to emulsify the egg white and create a lighter, foamier texture.

  3. Wet Shake: Add ice to the shaker and shake again for an additional 15 seconds. The ice will chill the drink and further froth the egg white.

  4. Strain: Double strain the cocktail into a chilled coupe glass. This ensures a smooth texture and removes any ice chips.

  5. Garnish: Express the oils from an orange twist by gently squeezing it over the drink and then dropping it in the glass.

Tips:

  • Fresh is Best: For the best flavor, use freshly squeezed lemon juice. Bottled juice can have a bitter aftertaste.

  • Pasteurized Power: If you're concerned about consuming raw egg whites, use pasteurized egg whites, which are readily available at most grocery stores.

  • Egg White Alternatives: If you cannot consume egg whites at all, you can try using aquafaba (the chickpea brine from a can of chickpeas) as a substitute. However, the texture of the drink will be slightly different.

  • Citrus Swap: If you don't have Cointreau, you can substitute another orange liqueur or even a splash of orange juice and simple syrup.

  • A Touch of Sweetness: If you prefer a slightly sweeter drink, add a bar spoon of simple syrup to the shaker.
