The Bee's Knees: A Classic Gin Cocktail

The Bee's Knees is a delightful Prohibition-era cocktail that showcases the perfect balance of gin, lemon, and honey.  This refreshing drink is ideal for any occasion, and it's surprisingly easy to make at home.

Ingredients:

  • 2 ounces gin
  • ¾ ounce lemon juice, freshly squeezed
  • ½ ounce honey syrup (recipe below)
  • Garnish: lemon twist

Honey Syrup:

*⅓ cup honey

*⅔ cup hot water

Instructions:

  1. Make the honey syrup (optional): Combine honey and hot water in a jar or mug. Stir until the honey dissolves completely. Let cool and store in the refrigerator for up to a month.

  2. Assemble the cocktail: Fill a cocktail shaker with ice. Add gin, lemon juice, and honey syrup (or simple syrup, if preferred) to the shaker.

  3. Shake it up: Secure the lid on the shaker and shake vigorously for about 30 seconds, or until the outside of the shaker becomes frosty.

  4. Strain and serve: Strain the cocktail into a chilled coupe glass.

  5. Garnish: Express the oils from a lemon twist by twisting it over the drink and then dropping it in the glass.

Tips:

  • For a richer honey flavor, use raw honey in your honey syrup.
  • If you don't have a cocktail shaker, you can combine the ingredients in a jar with ice and lid, then shake vigorously. Strain into a glass as usual.
  • Adjust the amount of honey syrup to your taste preference. For a tart drink, use less syrup. For a sweeter drink, use more.
  • For a special touch, rim the glass with honey before adding the drink.
